Steamed Clams with White Wine, Garlic, Cilantro & Parsley
This recipe gives you a platter full of colossal sea scallops, swimming in a light and creamy sauce of Lemon, Garlic, Shallots and Chives. It's thickened using almond milk and cornstarch, rather than ultra fattening and high in calorie heavy cream. Once you start cooking, the entire dish comes togehter in less than 15 minutes and is a DEFINITE show stopper. Though I chose to use colossal scallops for this recipe, because this is a "special occasion" dish, you can definitely use regular sized scallops. They are less money and you'll get 3x as many for the same price, which will increase the serving size per person, as well as adjusting the points per serving.
