with Spicy Linguica Sausage Seasoned Chicken
While looking for snazzy appetizers, I was flipping through a Tapas cookbook and saw Chicken Croquettes. I had no desire to make them, thinking that they were just glofied chicken nuggets, but when I actually looked into recipes for them, I realized how wrong I was. I was really surprised to find that the filling is actually cooked and shredded chicken, rather than just raw ground chicken, formed into a patty and breaded. At the same time, I was working on a recipe for a spicy Linguica sausage seasoning, so I figured "well... guess I might as well use it for the chicken." The breading is the low point crispy breading from my Onion Rings recipe, and I used the roasted red pepper and balsamic dip from the Dips download. Though I seasoned my chicken with the Linguica seasoning... you deeeeefinitely don't have to. Traditionally, the chicken should be simply seasoned. I was just in one of those "Let's see what happens" moods.
